60 g plain flour
160 ml fresh milk
6 rashers streaky bacon, rinded and cut into strips
1 egg white
Butter for frying
In a bowl add flour and mix in the egg, slowly add the milk. Mix as to make a smooth batter.
Add black pepper.
In a non stick pan fry the bacon until the bacon is crisp. Place on kitchen paper.
Whisk the egg white until soft and fold into the batter.
In the pan melt the butter on a medium heat, once sizzling add half the batter mix, covering the pan.
Cook until the top is setting, sprinkle over the bacon and cover with the remaining mixture.
Cook until the top is setting, turn over and cook until brown
