120 g dried apricots
1 large onion chopped
400 g minced beef
120 g pork sausage meat
120 g streaky bacon
2 ½ tpn rosemary,thyme
100 ml port
Short crust pastry
Pre heat oven 180°C (350°) Gas Mark 4
Chop the apricots into very small pieces.
In a mixing bowl add all the meats and onions together.
Mix in the apricots, herbs and port.
Line a 2lb loaf tin with 2/3 of the short crust pastry.
Add the meat mixture, pressing it in firmly.
Cover with the remaining pastry, pressing the edges together.
Bake in the oven for 40-45 mins
