30 g butter
110 g currants
30 g chopped mixed peel
60 g Demerara sugar
3 ml ground mixed spice
212 g (7 1/2 oz) packet frozen puff pastry, thawed
1 egg white
Caster sugar for sprinkling
In a saucepan melt the butter, stir in the peel, currants, spices and sugar.
Mix well together.
Roll out the pastry thinly on a floured surface, and cut into 8 circles.
Place the mixture on to the pastry rounds.
Damp the pastry edges and draw them into the centre, making sure they have sealed well.
Roll out the pastries into circles, cut 3 slits across the top of each.
Pre heat oven 220°C (425°F) mark 7
Bake on a baking sheet for 15-18 minutes.
