230 g plain flour
3 ml salt
2 ml baking powder
45 g lard, diced
45 g caster sugar
70 g currants
40 ml vegetable oil
30 g butter
50 ml water
Into a large bowl, add the flour, baking powder and salt.
Add the lard and rub well until it looks like breadcrumbs.
Mix in the sugar and currants.
Mix in the water t0 form dough.
Place onto a lightly floured surface and roll until about an inch thick.
Cut into 12 circles using a cutter.
In a frying pan heat the butter and oil.
Fry each cake for a few minutes on each side.
Dry of excess oil using kitchen paper.
