1 ½ lb steak, cut into small cubes
1 tablespoon all-purpose flour
salt and pepper to taste
1 ½ teaspoon brown sugar
3 large onions, peeled and chopped
350 ml Guinness Stout
6 slices bacon, chopped
3 ounces lard
Fresh parsley, chopped
Double crust pie pastry
Pre heat oven 320 degrees F
In a bowl add flour, salt & pepper. Add and cover the beef cubes.
In a heavy frying pan melt the lard; add the steak cubes and bacon until browned.
Remove and add to a casserole dish.
In the same pan fry the onions until brown then add to the beef.
Add the sugar to the Guinness and pour over the beef
Cover and cook in oven for 2 ½ -2 ¾ hours.
Occasionally remove from oven and stir, if necessary add a little more Guinness if gravy becomes to thick.
In a pie dish line with the pie pastry and cook this as directed on packet.
Add the beef and Guinness to the pie dish and cover with the remaining pie pastry.
Place in oven and cook for a further 15 minutes or until pastry is cooked.
