1 tbsp olive or cooking oil
1/2 oz butter
1 medium onion, chopped
3tsp each chopped fresh oregano and basil
1 chopped fresh parsley
freshly ground black pepper to taste
6 tbsp tomato puree
180 ml meat stock
130 ml dry white wine
1 tsp granulated sugar
1 tbsp plain flour
8 tenderloin fillets, about 1-inch thick
For the stuffing
225 g feta cheese, crumbled
9 chives, chopped
In a mixing bowl firstly make the stuffing by mixing the feta cheese and chives together.
Tender the meat by flattening each piece with your palm pressing hard.
Spread the stuffing mix on each piece of meat and roll up. To secure use cocktail sticks or string.
In pan melt butter add oil and brown the meat
Place in the onions and cook for a few minutes.
Add the seasoning.
In another pan stir in wine, sugar, tomato puree and meat stock, once it has heated add to the meat and onions
Cover with lid
Simmer over a low heat for about 1 ½ hours
If needed add a little flour and water paste to thicken
