5 herrings, filleted
500 g cooking apples, peeled, cored and sliced
2 teaspoon lemon juice
180 g short crust pastry
500 g potatoes, peeled and sliced thinly
2 tablespoon freshly chopped parsley
2 tablespoon freshly chopped tarragon
salt and pepper
Pre heat oven 180°C (350°F) mark 4
Using a large ovenproof dish rub the butter over.
Alternating layers line dish with potatoes, herring then the apples
Sprinkle in the lemon juice, herbs and seasoning.
Blob the butter in places and then cover with the pastry.
Brush with some milk and cook in the oven for 40-50 minutes.
